Installing the plan
Go to Settings > Network & internet > SIMs and add a SIM or eSIM (menu names vary by Android version), then scan the QR code. Do it before you leave, on Wi-Fi, then turn on the line for data when you arrive in Taiwan.
Set up your eSIM in 4 steps
